At the beginning, Tom would cycle to and from the first Honest in Brixton and our butchers in Marylebone every day. A few years on, Tom’s no longer our bicycle courier, but we’re still doing things our way – even if that’s the hard way – to make a better burger.

We love nduja, pronounced 'en-DOO-ya', which a slightly spicy spreadable sausage from Calabria in Italy. Only ours is from Islington, where the good people at Cobble Lane Cured cut, cure, smoke and hang meats that become a delicious range of award-winning British artisan charcuterie.
Don't tell the Italians but Cobble Lane's nduja is every bit as delicious as the real thing...
